If you are looking for a way to get more vegetables in your diet (but you aren’t a fan of vegetables) . . . check out these healthy zucchini fries!
They are pretty easy to whip up for a busy week night and your kids (and you) will love them! Guaranteed!
Healthy Zucchini Fries Recipe: Serves 4
2 medium zucchini’s (don’t let them get too big or they get seedy) 1/2 cup egg whites 1 cup Parmesan cheese 1/2 tsp garlic powder Salt/pepper to taste Coconut oil spray or olive oil spray
Cut the zucchini into “fries”. Dip in egg whites Put in gallon bag with the Parmesan cheese and spices.
Line a baking sheet with foil and put cooling racks on top (and spray)
Put your zucchini on top and spray with either Coconut oil or olive oil spray.
Bake in 425 oven for 20-25 mins.
When I first made this we didn’t have an air fryer . . . we do now and I’m going to try them in there too! I bet they will be extra delicious!
